Ingredients
3–4 ripe bananas, mashed
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp salt
½ cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup chopped macadamia nuts (optional)
½ cup crushed pineapple, drained (optional)
½ cup shredded coconut (optional)
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
Whisk together the mashed bananas, flour, baking soda, and salt in a large bowl.
Combine melted butter, sugar, eggs, and vanilla extract in another bowl. Mix well.
Gently stir wet ingredients into the dry ingredients. Do not overmix.
Fold in optional mix-ins like macadamia nuts, pineapple, or coconut.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 55–60 minutes, or until a toothpick inserted in the center comes clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use bananas with brown spots for the best flavor.
Add chopped dried fruit for extra tropical flair.
For a more indulgent version, sprinkle brown sugar on top before baking.
Banana bread freezes well for up to 2 months.
