  • Author: mymamarecipes.com
  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Description

These Baked Honey BBQ Popcorn Chicken bites are the perfect crispy, sweet, and savory combination. Coated in crushed cornflakes for an irresistible crunch and finished with a sticky honey BBQ glaze, they’re an easy, healthier alternative to fried snacks—ideal for family dinners, game days, or party platters.

Ingredients

Scale

For the Chicken:

  • 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces

  • 1 cup all-purpose flour

  • 5 cups cornflakes cereal, lightly crushed

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ¼ tsp smoked paprika

  • 2 large eggs

  • ¼ cup milk

For the Honey BBQ Sauce:

  • ¾ cup BBQ sauce (Sweet Baby Ray’s recommended)

  • ¼ cup honey

  • ¼ cup ketchup

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  • In three separate bowls, combine flour mixed with salt, pepper, garlic powder, and paprika, beaten eggs with milk, and crushed cornflakes.

  • Coat chicken pieces in flour, dip in egg wash, and coat in cornflakes.

  • Arrange coated chicken on the baking sheet in a single layer.

  • Bake for 18–20 minutes, flipping halfway, until golden and internal temp reaches 165°F (74°C).

  • Meanwhile, combine BBQ sauce, honey, and ketchup in a saucepan over medium heat. Simmer for 5–7 minutes, stirring until slightly thickened.

  • Let chicken rest 2–3 minutes, then toss in warm sauce or brush on top.

  • Serve immediately or keep warm in the oven at low heat.

Notes

For extra crunch, toast cornflakes slightly before breading.

Sauce can be customized—add hot sauce for heat or mustard for tang.

Reheat leftovers in the oven or air fryer to maintain crispiness.

Freeze breaded, uncooked chicken bites for future meals.
