  • 2 cups fresh broccoli florets
  • 2 packs instant ramen noodles (seasoning packets discarded)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional for depth)
  • 1 tablespoon honey or light brown sugar
  • 1 tablespoon sesame oil
  • 2 teaspoons rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 3 tablespoons water
  • 2 tablespoons vegetable or avocado oil (for cooking)
  • 2 tablespoons sliced green onions (for garnish)
  • 1 teaspoon sesame seeds (optional)


Instructions

  1. Slice beef thinly and chop broccoli into small florets. Boil ramen noodles for 2 minutes, drain, and set aside.
  2. Heat oil in a large skillet over medium-high heat. Add beef in a single layer, sear until browned, then remove.
  3. Add a bit of oil to the skillet and toss in broccoli. Add a splash of water, cover, and steam for 2 minutes until tender-crisp.
  4. Whisk soy sauce, honey, sesame oil, rice vinegar, garlic, and ginger. Add sauce to skillet with broccoli, stir in cornstarch mixture.
  5. Return beef and add noodles. Toss everything to coat evenly in sauce.
  6. Garnish with green onions and sesame seeds, then serve hot.
