Instructions
- Soften onion in olive oil until translucent, then add garlic and cook just until fragrant.

- Warm fire-roasted corn with pimentos, scallions, cumin, salt, and pepper until sizzling and aromatic; set aside.
- Brown ground beef in a hot skillet until deeply caramelized, drain excess fat, then season with chili powder, paprika, cumin, salt, and pepper.
- Add a splash of water and simmer until the seasoning clings to the beef.
