- 1 cup long-grain white or brown rice (dry)
- 2 cups water or low-sodium broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 medium yellow onion, diced
- 1 large bell pepper, diced
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 3/4 teaspoon salt
- 1 tablespoon fresh lime juice
- 1/2 cup shredded cheddar or Mexican-blend cheese
- 1/2 cup sour cream or plain Greek yogurt
- 1 large avocado, sliced
- 1/2 cup pico de gallo or salsa
- 1/4 cup fresh cilantro, chopped
Instructions
- Rinse the rice and cook it with water or broth according to package instructions.
- Fluff the cooked rice and stir in lime juice and a pinch of salt.
- Heat olive oil in a skillet over medium heat and sauté the onion and bell pepper until softened.
- Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
- Stir in taco seasoning, cumin, chili powder, and salt, then simmer for a few minutes.
- Warm the black beans and corn in a small saucepan or microwave.
- Assemble bowls by layering rice, seasoned beef, beans, and corn.
- Finish with cheese, avocado, salsa, sour cream, and fresh cilantro before serving.
