Description

A hearty Beef Burrito Bowl made with seasoned ground beef, fluffy rice, beans, corn, and fresh toppings. Easy to customize, perfect for meal prep, and better than takeout.


Ingredients

  • 1 lb ground beef (90% lean)
  • 1 cup long-grain white or brown rice (dry)
  • 2 cups water or low-sodium broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 medium yellow onion, diced
  • 1 large bell pepper, diced
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon salt
  • 1 tablespoon fresh lime juice
  • 1/2 cup shredded cheddar or Mexican-blend cheese
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 large avocado, sliced
  • 1/2 cup pico de gallo or salsa
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Rinse the rice and cook it with water or broth according to package instructions.
  2. Fluff the cooked rice and stir in lime juice and a pinch of salt.
  3. Heat olive oil in a skillet over medium heat and sauté the onion and bell pepper until softened.
  4. Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
  5. Stir in taco seasoning, cumin, chili powder, and salt, then simmer for a few minutes.
  6. Warm the black beans and corn in a small saucepan or microwave.
  7. Assemble bowls by layering rice, seasoned beef, beans, and corn.
  8. Finish with cheese, avocado, salsa, sour cream, and fresh cilantro before serving.
