Berry Cheesecake Salad is a no-bake summer dessert that combines the creamy richness of cheesecake with the sweet, juicy freshness of strawberries, blueberries, and raspberries. Ingredients
8 oz (225g) block cream cheese, softened
⅓ cup granulated sugar
1 tsp vanilla extract
1 cup heavy whipping cream (or substitute with whipped cream)
1½ cups fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh raspberries
Optional add-ins: mini marshmallows, chopped nuts, crushed graham crackers, banana slices, pineapple chunks, or coconut flakes
Fresh mint for garnish (optional)
Instructions
Wash all berries gently and pat dry completely. Set aside.
In a large mixing bowl, beat softened cream cheese with sugar and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Add the prepared berries to the cheesecake mixture. Stir gently until well combined.
Chill the salad for at least 1 hour before serving.
Garnish with extra berries or mint leaves if desired.
Notes
Substitute whipped cream with Greek yogurt or light whipped topping for a lighter version.
Keep the berries dry to avoid excess moisture in the salad.
