Ingredients
For the Cake:
2¾ cups cake flour (sifted)
1½ cups granulated sugar
¾ cup Dutch-process cocoa powder
1½ tsp baking soda
4 large eggs (room temperature)
1 cup buttermilk
½ cup blackberry puree (reduced for intensity)
½ tsp vanilla extract
For the Glaze:
2 cups powdered sugar
⅓ cup heavy cream
3 tbsp melted dark chocolate
Optional Garnishes:
Fresh blackberries
Edible gold dust
Chocolate shards
Edible flowers or smoked rosemary sprigs
Instructions
Preheat Oven: Set oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
Prepare Dry Ingredients: In a large bowl, sift flour, cocoa powder, and baking soda. Mix thoroughly with a whisk.
Mix Wet Ingredients: In a separate bowl, combine eggs, buttermilk, blackberry puree, and vanilla extract. Whisk gently.
Combine Batter: Fold wet mixture into dry ingredients slowly. Stir until just combined—do not overmix.
Bake: Divide batter evenly among pans. Bake 25–30 minutes, rotating halfway. Use a toothpick to test for doneness.
Cool Cakes: Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare Glaze: In a bowl, whisk powdered sugar, cream, and melted dark chocolate until smooth.
Assemble Cake: Level cake layers if needed. Stack with glaze between each layer. Pour remaining glaze over top.
Decorate: Garnish with berries, edible glitter, or chocolate shards. Let glaze set before slicing.
