Ingredients

- 2 cups fresh blueberries
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- 4 slices sourdough bread
- 4 tablespoons butter, softened
- 1 1/2 cups shredded white cheddar cheese
- 2 tablespoons blueberry jam (optional)
Instructions
- Simmer blueberries, sugar, and lemon until thickened into a compote.
- Butter the outside of each sourdough slice.
- Spread blueberry compote on one slice of bread.
- Top with shredded white cheddar and close the sandwich.
- Grill over medium heat until golden and cheese is melted.
- Let rest one minute before slicing and serving.
Notes
- If using frozen blueberries, simmer a little longer to thicken.
- For a tangier flavor, add a touch more lemon to the compote.
