  • 3 cups chicken or vegetable broth
  • 1 1/2 cups whole milk
  • 1/2 cup half-and-half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon garlic powder


Instructions

  1. Melt butter in a large pot and sauté the diced onion until softened.
  2. Stir in the flour to form a smooth roux, whisking gently.
  3. Slowly pour in the broth while whisking to prevent lumps.
  4. Add milk and half-and-half, allowing the mixture to warm through.
  5. Add broccoli and carrots, then simmer until the vegetables soften.
  6. Blend part or all of the soup for desired texture.
  7. Lower the heat and gently stir in the cheddar cheeses until fully melted.
  8. Season with salt, pepper, smoked paprika, and garlic powder.
  9. Simmer briefly and serve hot with garnish.
