Description
A simple, healthy **broccoli pasta** that’s perfect for busy nights. It combines tender broccoli, pasta, and a garlic olive oil sauce, topped with Parmesan.
Ingredients
- 1 pound pasta (spaghetti, penne, or any pasta you prefer)
- 2 cups fresh broccoli florets
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes (optional, for a little heat)
- Freshly grated Parmesan cheese (optional, for serving)
Instructions
1. Boil a large pot of salted water and cook pasta according to package instructions until al dente.
2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
3. Add minced garlic and sauté for about 1 minute until fragrant.
4. Add broccoli florets to the skillet and sauté for another 3-4 minutes until tender but still vibrant.
5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with broccoli.
6. Toss everything together, adding the reserved pasta water to help combine.
7. Season with salt, pepper, and red pepper flakes. Optionally, stir in grated Parmesan cheese.
8. Serve immediately, topping with extra Parmesan if desired.
Notes
- For a creamier version, you can stir in some heavy cream or a dollop of ricotta cheese.
- For extra protein, add chicken, shrimp, or sausage to the dish.
- Feel free to experiment with pasta shapes and additional veggies like mushrooms or bell peppers.
