  • 1 large egg + 1 egg yolk
  • 2 teaspoons pure vanilla extract
  • Optional: ½ teaspoon ground cinnamon
  • Optional: ½ cup chopped nuts or chocolate chips


Instructions

  1. Whisk together flour, baking soda, baking powder, and salt.

  2. Cream butter and brown sugar until light and fluffy.

  3. Add egg, yolk, and vanilla; beat until well combined.

  4. Gradually mix in dry ingredients until just blended.

  5. Chill dough for 30–60 minutes for thicker cookies.

  6. Preheat oven to 350°F (175°C).

  7. Scoop dough onto a parchment-lined baking sheet.

  8. Bake for 9–11 minutes until edges are golden.

  9. Cool briefly on the pan before transferring to a wire rack.
