Ingredients

  • 2 large chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 12 ounces penne pasta
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Season chicken with Cajun seasoning.
  2. Sear chicken in olive oil until golden, then remove and slice.
  3. Sauté onions, peppers, and garlic in the same skillet.
  4. Pour in heavy cream and stir in Parmesan until smooth.
  5. Cook pasta until al dente and reserve some pasta water.
  6. Combine pasta with sauce, adding pasta water if needed.
  7. Fold sliced chicken back into the sauce and simmer briefly.
  8. Garnish with parsley and serve warm.
