Ingredients
For Cajun Seasoning (or use store-bought):
2 tsp smoked paprika

For the Pasta Bake:
1 tbsp olive oil
1 lb chicken thighs or breasts, cut into bite-size pieces
3 cloves garlic, minced
1 can fire-roasted tomatoes (or regular diced)
2 cups chicken broth
8 oz penne pasta (uncooked)
4 oz cream cheese
1 cup shredded cheese (cheddar or mozzarella, for topping)
Optional: chopped green onions, jalapeños, or red pepper flakes
Instructions
Season the chicken: Mix Cajun spices in a small bowl. Toss with chicken and marinate for at least 20 minutes.
Cook the chicken: Heat oil in a large skillet. Add chicken and sear for 6–7 minutes until golden.
Assemble the dish: Add tomatoes, broth, and uncooked pasta to the skillet. Bring to a simmer.
Stir in cream cheese: Let pasta cook for 10 minutes. Stir in cream cheese until melted and combined.
Top and bake: Sprinkle shredded cheese over the top. Broil or bake until golden and bubbly.
