Ingredients

  • 1 cup all-purpose flour
  • ¼ cup packed brown sugar
  • ½ cup unsalted butter, softened
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 medium Granny Smith apples, peeled and diced
  • 1 tablespoon all-purpose flour
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup rolled oats
  • ½ cup flour
  • ½ cup brown sugar
  • ¼ teaspoon cinnamon
  • ¼ cup cold butter, cubed
  • ½ cup soft caramels or caramel bits
  • 2 tablespoons heavy cream


Instructions

  1. Preheat oven to 350°F and line a 9×9-inch pan with parchment paper.

  2. Mix flour, brown sugar, and butter for the crust; press into pan and bake 10 minutes.

  3. Beat cream cheese until smooth, then add sugar, vanilla, and egg. Spread evenly over crust.

  4. Toss diced apples with flour, sugar, cinnamon, and nutmeg. Spoon mixture over cheesecake layer.

  5. Combine oats, flour, brown sugar, cinnamon, and butter until crumbly; sprinkle over apples.

  6. Bake 30–35 minutes until edges set and center slightly jiggles.

  7. Cool completely, refrigerate 2 hours, then drizzle with melted caramel before slicing.

Notes

  1. Store in an airtight container in the refrigerator for up to 5 days.
  2. Freeze (without caramel drizzle) for up to 2 months.
  3. Serve chilled or slightly softened at room temperature.
