1 pound rotini pasta

1 pound ground beef (80/20 preferred)

1 cup sweet corn (canned or frozen)

1 cup sour cream

1 packet ranch seasoning mix

½ cup cream cheese (softened)

2 cups shredded cheddar cheese (divided)

Salt and black pepper, to taste

½ cup breadcrumbs (optional, for topping)

1 tablespoon butter (melted, optional for topping)
Instructions

Preheat oven to 375°F (190°C).

Boil rotini pasta in salted water until al dente (7–8 minutes). Drain and set aside.

In a large skillet, cook the ground beef over medium heat until browned. Break into crumbles and drain excess fat.

In a mixing bowl, combine sour cream, ranch seasoning, and cream cheese. Mix until smooth.

Add cooked beef, corn, and cooked pasta to the bowl. Stir to coat everything in the creamy ranch mixture.

Stir in 1½ cups of shredded cheddar cheese.

Pour the mixture into a greased 9×13-inch baking dish.

Top with the remaining ½ cup of cheddar cheese. If desired, mix breadcrumbs with melted butter and sprinkle on top.
