Ingredients

  • 1½ cups grated cheddar cheese

  • ½ cup mayonnaise

  • 1 small carrot, finely grated

  • ¼ cup red onion or scallions, finely chopped

  • 1 teaspoon mustard (Dijon or yellow)

  • ½ teaspoon paprika (smoked or sweet)

  • Salt and pepper to taste

  • Optional: chopped bell peppers, pimentos, dill pickles, cayenne


Instructions

  • Grate the cheddar cheese and carrot finely.

  • Dice the onion or scallions into small pieces.

  • In a medium bowl, combine the grated cheese and mayonnaise.

  • Stir in the grated carrot and chopped onion.

  • Add mustard, paprika, salt, and pepper. Mix well.

  • Adjust consistency with a bit more mayo or a splash of milk if needed.

  • Chill for at least 15 minutes before serving.

Notes

Use full-fat mayo for richness or lighten it up with Greek yogurt.

Best served cold or at room temperature.
