Ingredients
1½ cups grated cheddar cheese
½ cup mayonnaise
1 small carrot, finely grated
¼ cup red onion or scallions, finely chopped
1 teaspoon mustard (Dijon or yellow)
½ teaspoon paprika (smoked or sweet)
Salt and pepper to taste
Optional: chopped bell peppers, pimentos, dill pickles, cayenne
Instructions
Grate the cheddar cheese and carrot finely.
Dice the onion or scallions into small pieces.
In a medium bowl, combine the grated cheese and mayonnaise.
Stir in the grated carrot and chopped onion.
Add mustard, paprika, salt, and pepper. Mix well.
Adjust consistency with a bit more mayo or a splash of milk if needed.
Chill for at least 15 minutes before serving.
Notes
Use full-fat mayo for richness or lighten it up with Greek yogurt.
Best served cold or at room temperature.
