Ingredients
Cookie Dough:
1 cup (2 sticks) unsalted butter, softened
¾ cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semi-sweet chocolate chips
Cheesecake Filling:
16 oz (2 packages) cream cheese, softened
½ cup granulated sugar
2 teaspoons vanilla extract
Pinch of salt
1 large egg yolk
Instructions
Make the cheesecake filling: In a bowl, beat softened cream cheese with sugar, vanilla, salt, and egg yolk until smooth. Refrigerate for 30 minutes.
Prepare the cookie dough: Cream butter with both sugars. Add eggs and vanilla. In another bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into the wet mixture. Fold in chocolate chips.
Shape the cookies: Scoop two tablespoons of dough, flatten it, and place one teaspoon of cheesecake filling in the center. Fold the dough around the filling and seal. Repeat.
Bake: Place filled dough balls on a lined baking sheet. Bake at 325°F (165°C) for 25–30 minutes, or until golden around the edges.
Cool and serve: Let cool on the pan for 10 minutes before transferring to a wire rack.
Notes
For a gooey center, don’t overbake.
You can prepare the filling and store it in the fridge.
Optional add-ins: mini chocolate chips, chopped nuts, or crushed cookies in the filling.
Freeze unbaked cookie balls for up to 3 months.
