- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 4 cups diced Russet or Yukon Gold potatoes
- 3 cups beef broth
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1 cup diced carrots
- 1 cup diced celery
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Brown the ground beef in a large pot until fully cooked, then drain excess grease if needed.
- Add onion, garlic, carrots, and celery and cook until softened. Stir in butter and flour to form a roux.
- Add diced potatoes and pour in the broth. Simmer until potatoes are tender.
- Reduce heat and stir in milk and cheddar cheese until melted and smooth.
- Season with paprika, salt, and pepper. Serve warm with extra cheese or green onions.
Notes
- Use Russet potatoes for a naturally thicker soup.
- Add broth or milk when reheating if the soup becomes too thick.
- Melt cheese off the heat to prevent curdling.
