Description
This cheesy skillet lasagna is a one-pan version of the classic comfort food, packed with tender noodles, rich tomato sauce, and a melty trio of ricotta, mozzarella, and Parmesan. It’s quick, satisfying, and perfect for busy weeknights.
Ingredients

1 lb ground beef or Italian sausage

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

2 ½ cups crushed tomatoes or marinara sauce

2 cups chicken or vegetable broth

8 oz lasagna noodles, broken into pieces

¾ cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 tsp dried oregano
-
1 tsp dried basil

Salt and pepper, to taste

Optional: red pepper flakes, fresh parsley for garnish
Instructions

Heat olive oil in a large skillet over medium heat. Sauté the diced onion and garlic until soft and fragrant.

Add the ground beef or sausage and cook until browned, breaking it up as it cooks. Drain excess fat.

Stir in the crushed tomatoes, broth, oregano, basil, salt, and pepper.

Add broken lasagna noodles, making sure they are mostly submerged in the liquid.

Cover and simmer for 15–20 minutes, stirring occasionally until noodles are tender.

Spoon ricotta in dollops over the top. Sprinkle with mozzarella and Parmesan.

Cover and cook 3–5 minutes until cheese is melted.

(Optional) Broil for 2–3 minutes for a golden, bubbly top.

Garnish with parsley and serve warm.
Notes
Cottage cheese can be used in place of ricotta for a lighter option.
For a vegetarian version, use mushrooms or spinach instead of meat.
Add a bit of broth if the noodles absorb too much liquid.
Best served fresh, but also reheats and freezes well.
