Cheesy Skillet Lasagna

Cheesy Skillet Lasagna: The One-Pot Comfort Dish You’ll Crave All Week

  • Author: Manar Annan
  • Total Time: 40 minutes
  • Yield: 4 to 6 servings 1x

Description

This cheesy skillet lasagna is a one-pan version of the classic comfort food, packed with tender noodles, rich tomato sauce, and a melty trio of ricotta, mozzarella, and Parmesan. It’s quick, satisfying, and perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground beef or Italian sausage

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 ½ cups crushed tomatoes or marinara sauce

  • 2 cups chicken or vegetable broth

  • 8 oz lasagna noodles, broken into pieces

  • ¾ cup ricotta cheese

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and pepper, to taste

  • Optional: red pepper flakes, fresh parsley for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Sauté the diced onion and garlic until soft and fragrant.

  • Add the ground beef or sausage and cook until browned, breaking it up as it cooks. Drain excess fat.

  • Stir in the crushed tomatoes, broth, oregano, basil, salt, and pepper.

  • Add broken lasagna noodles, making sure they are mostly submerged in the liquid.

  • Cover and simmer for 15–20 minutes, stirring occasionally until noodles are tender.

  • Spoon ricotta in dollops over the top. Sprinkle with mozzarella and Parmesan.

  • Cover and cook 3–5 minutes until cheese is melted.

  • (Optional) Broil for 2–3 minutes for a golden, bubbly top.

  • Garnish with parsley and serve warm.

Notes

Cottage cheese can be used in place of ricotta for a lighter option.

For a vegetarian version, use mushrooms or spinach instead of meat.

Add a bit of broth if the noodles absorb too much liquid.

Best served fresh, but also reheats and freezes well.
