- 2 tablespoons olive oil
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 3 minced garlic cloves
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 1 pound cooked shredded chicken
- Salt and black pepper to taste
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3/4 cup milk
- 3 tablespoons melted butter
Instructions
- Heat olive oil in a large pot and sauté onion, celery, and carrots until softened.
- Stir in garlic and cook briefly until fragrant.
- Add broth, herbs, bay leaf, chicken, salt, and pepper. Simmer gently.
- Mix flour, baking powder, salt, milk, and melted butter to form a dumpling dough.
- Drop spoonfuls of dough onto the simmering soup.
- Cover and cook until dumplings are fluffy and cooked through, about 12–15 minutes.
- Remove bay leaf, adjust seasoning, and serve warm.
Notes
- Do not lift the lid while dumplings cook or they may become dense.
- For a creamier broth, add a splash of milk or half-and-half at the end.
