  • 3/4 cup freshly grated Parmesan cheese

  • Salt and black pepper, to taste

  • 1 tablespoon olive oil (for searing chicken)

  • 1/4 cup finely diced onion (optional)

  • Fresh parsley, chopped (for garnish)

  • Optional: 1 cup sliced mushrooms, sautéed


Instructions

  1. Cook the Chicken: Season with salt and pepper. In a skillet, heat olive oil and sear chicken 4–5 minutes per side until golden and cooked through. Remove and rest, then slice.

  2. Boil the Pasta: Cook fettuccine in salted water until al dente. Reserve 1/2 cup pasta water before draining.

  3. Make the Sauce: In the same skillet, melt butter and sauté garlic (and onions, if using) for 1–2 minutes. Add half-and-half and simmer for 8–10 minutes. Gradually stir in Parmesan until melted and smooth.

  4. Combine: Add pasta and sliced chicken to the sauce. Toss to coat. Use reserved pasta water to loosen sauce if needed.

  5. Serve: Plate and garnish with chopped parsley and extra cheese.

Notes

Use freshly grated Parmesan for a smoother sauce.

Keep the sauce on low heat to prevent curdling or separation.

Add cooked mushrooms or spinach for extra flavor and texture.

Letting the pasta rest a few minutes after cooking enhances texture and allows sauce to cling better.
