Chicken Fettuccine Alfredo is a creamy, comforting pasta dish that blends tender sautéed chicken with a rich Parmesan-infused Alfredo sauce and perfectly cooked fettuccine. This lighter version of the Italian-American classic is made with simple ingredients and comes together in under 40 minutes—ideal for both busy weeknights and special occasions.
Ingredients
1 lb (450 g) boneless, skinless chicken breasts or thighs
12 oz (340 g) fettuccine pasta
2 tablespoons unsalted butter, divided
2 cloves garlic, minced
1 cup half-and-half (or mix of milk + cream)
3/4 cup freshly grated Parmesan cheese
Salt and black pepper, to taste
1 tablespoon olive oil (for searing chicken)
1/4 cup finely diced onion (optional)
Fresh parsley, chopped (for garnish)
Optional: 1 cup sliced mushrooms, sautéed
Instructions
Cook the Chicken: Season with salt and pepper. In a skillet, heat olive oil and sear chicken 4–5 minutes per side until golden and cooked through. Remove and rest, then slice.
Boil the Pasta: Cook fettuccine in salted water until al dente. Reserve 1/2 cup pasta water before draining.
Make the Sauce: In the same skillet, melt butter and sauté garlic (and onions, if using) for 1–2 minutes. Add half-and-half and simmer for 8–10 minutes. Gradually stir in Parmesan until melted and smooth.
Combine: Add pasta and sliced chicken to the sauce. Toss to coat. Use reserved pasta water to loosen sauce if needed.
Serve: Plate and garnish with chopped parsley and extra cheese.
Notes
Use freshly grated Parmesan for a smoother sauce.
Keep the sauce on low heat to prevent curdling or separation.
Add cooked mushrooms or spinach for extra flavor and texture.
Letting the pasta rest a few minutes after cooking enhances texture and allows sauce to cling better.
Leftovers can be turned into a baked pasta dish the next day.
