Description

Ingredients

  • Boneless skinless chicken thighs or breasts – 1½ pounds
  • Olive oil – 2 tablespoons
  • Fresh lime juice – 3 tablespoons
  • Garlic, minced – 3 cloves
  • Ground cumin – 1 teaspoon
  • Smoked paprika – 1 teaspoon
  • Chili powder – 1 teaspoon
  • Salt – ¾ teaspoon
  • Black pepper – ½ teaspoon
  • Small corn tortillas – 12
  • White onion, finely diced – ½ cup
  • Fresh cilantro, chopped – ½ cup
  • Cotija cheese, crumbled – ⅓ cup
  • Lime wedges – for serving


Instructions

  1. Whisk olive oil, lime juice, garlic, cumin, paprika, chili powder, salt, and pepper in a bowl.
  2. Add chicken and toss to coat evenly. Marinate for at least 20 minutes.
  3. Heat a cast-iron skillet or grill pan over medium-high heat.
  4. Cook chicken for 5–7 minutes per side until fully cooked and lightly charred.
  5. Remove chicken from heat and rest for 5 minutes, then slice thinly.
  6. Warm corn tortillas in a dry skillet or over a flame.
  7. Fill tortillas with sliced chicken, onion, cilantro, and cotija cheese.
  8. Serve immediately with lime wedges.

Notes

  1. Chicken thighs provide the juiciest results, but chicken breast works well if cooked carefully.
  2. Double up tortillas if they tear easily.
