  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 8 ounces egg noodles
  • 2 tablespoons butter
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for garnish


Instructions

  1. Season the chicken breasts evenly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and add the chicken, cooking until golden brown on both sides and cooked through, then remove from the pan.
  3. Lower the heat to medium, add butter, and cook the mushrooms until they release moisture and begin to brown.
  4. Add garlic, thyme, and oregano and cook briefly until fragrant.
  5. Pour in the chicken broth to deglaze the pan, scraping up any browned bits, and simmer until reduced.
  6. Stir in the heavy cream and gently simmer until the sauce lightly thickens.
  7. Return the chicken to the skillet and warm through in the sauce.
  8. Cook the egg noodles separately until just tender, then toss with butter and salt.
  9. Serve the chicken and sauce over the buttered noodles and garnish with parsley and Parmesan.
