This homemade version of the famous Costco Chicken Bake delivers all the delicious flavor of the original. Packed with shredded chicken, crispy bacon, gooey cheese, and creamy Caesar dressing, all wrapped in a golden pizza crust, it’s a satisfying and family-friendly dish that’s easy to prepare. Perfect for dinner, meal prep, or freezing for later!
Ingredients
1 lb pizza dough
3 cups cooked and shredded rotisserie chicken
1 1/2 cups shredded mozzarella cheese
1/2 cup crumbled bacon (about 6 slices)
1 cup shredded Parmesan cheese
3/4 cup Caesar dressing
3 tablespoons chopped chives (or green onions)
Optional: garlic powder for extra flavor
Egg wash (1 egg + 1 tablespoon water, beaten)
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
On a floured surface, roll out pizza dough into a large rectangle, about 12×8 inches.
Spread Caesar dressing over the dough, leaving a 1-inch border.
Layer shredded chicken, mozzarella, Parmesan, bacon, and chives evenly over the dressing.
Roll the dough lengthwise like a jelly roll, pinching the seam and ends to seal.
Place seam-side down on the baking sheet. Brush the top with egg wash and sprinkle with extra cheese if desired.
Bake for 20–25 minutes until golden brown and bubbly.
Let rest for 5 minutes before slicing. Serve with extra Caesar dressing or marinara sauce for dipping.

Use store-bought dough for convenience, or make your pizza dough from scratch.
