Ingredients

  • 1 lb ground beef (80/20)

  • ¾ cup water or beef broth

  • 2 tbsp masa harina

  • 1 tbsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp oregano

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp sugar

  • Optional: 1 tbsp tomato paste

  • Optional: pinch of cocoa powder or splash of vinegar/lime juice


Instructions

  • Brown the ground beef in a skillet over medium heat until fully cooked, breaking it into fine crumbles.

  • Drain excess fat, leaving a little for moisture.

  • Add all spices and seasonings to the beef and stir well.

  • Pour in water or broth and mix until combined.

  • Simmer uncovered for 15–20 minutes, stirring occasionally.

  • Mix masa harina with warm water in a separate bowl, then stir into the beef.

  • Simmer for another 5 minutes until thickened.

  • Adjust seasoning to taste and serve warm.

Notes

Use 80/20 beef for the best flavor and texture.

For a keto version, skip masa harina and use almond flour.

You can batch-cook and freeze for up to 3 months.
