  • 1 cup granulated sugar

  • ¾ cup light brown sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 ¼ cups all-purpose flour

  • ⅔ cup Dutch-process cocoa powder

  • 1 tablespoon cornstarch

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 cup semi-sweet chocolate chips (60% cacao)

  • ½ cup rainbow candy-coated chocolate chips or sprinkles

  • Optional toppings: toasted nuts, caramel sauce, crushed peppermint, sea salt


Instructions

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.

  2. Cream the butter, granulated sugar, and brown sugar in a stand mixer for exactly 2 minutes.

  3. Add eggs one at a time, then mix in vanilla extract until combined.

  4. Whisk flour, cocoa powder, cornstarch, baking powder, and salt in a separate bowl.

  5. Fold dry ingredients into the wet mixture until just combined—avoid overmixing.

  6. Stir in chocolate chips and desired mix-ins.

  7. Scoop dough using a 3-tbsp cookie scoop onto prepared trays.

  8. Top each with rainbow sprinkles or candies.

  9. Bake for 12–14 minutes. Edges should be set, centres soft.

  10. Cool on a baking sheet for 5 minutes, then transfer to wire racks.

Notes

Use room temperature butter and eggs for even mixing.

Let the dough rest for 10 minutes before baking for shiny, crackled tops.

Freeze dough balls on a tray, then store in a freezer bag for up to 3 months.

Press dough into a 9×13 pan for cookie bars and bake for 22–25 minutes.
