  • 1½ cups dry orzo
  • 3 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: red pepper flakes, parsley, lemon zest


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté until softened.
  3. Stir in minced garlic and cook briefly.
  4. Add sliced chicken sausage and brown lightly.
  5. Pour in dry orzo and toast for one minute.
  6. Add chicken broth and cream, stirring to combine.
  7. Bring to a gentle simmer and cook until orzo is tender.
  8. Stir in fresh spinach until wilted.
  9. Mix in Parmesan cheese and season with salt, pepper, and paprika.
  10. Adjust consistency with broth if needed and serve warm.
