Description

This cool and refreshing creamy cucumber salad combines crisp cucumbers, tangy sour cream, and fresh dill. It’s the perfect easy side dish for summer meals, BBQs, and potlucks, bringing a light yet flavorful touch to any plate.


Ingredients

  • 2 large cucumbers (English or Persian preferred), thinly sliced

  • ½ cup sour cream

  • 2 tbsp white vinegar

  • 1 tsp sugar

  • Salt and pepper to taste

  • 1 tbsp fresh dill, chopped

  • ¼ cup red onion, thinly sliced (optional)


Instructions

  • Thinly slice cucumbers and place in a colander. Sprinkle with salt and let sit for 15–20 minutes.

  • Rinse cucumbers and pat them dry thoroughly with paper towels.

  • In a large mixing bowl, whisk together sour cream, vinegar, sugar, dill, salt, and pepper.

  • Add cucumbers and optional red onions to the dressing and mix gently.

  • Cover and refrigerate for at least 30 minutes before serving.

Notes

Salting and draining the cucumbers prevents a watery salad.

Greek yogurt can be used as a substitute for sour cream.

Adjust seasoning after chilling as the flavours develop over time.

Best served cold and within 2–3 days of preparation.
