Ingredients

1 cup all-purpose flour (for dusting)
Beer Batter:
¾ cup all-purpose flour
¼ cup cornstarch
1 tsp baking powder
1 tsp salt
1 cup cold beer or sparkling water
For the Onion Rings:
2 large sweet onions (Vidalia or yellow), sliced into ¼-inch rings
1 cup buttermilk
¾ cup flour
¼ cup cornstarch
1 tsp paprika
Salt and pepper, to taste
For Frying:
Vegetable oil (for deep frying)
Instructions
Prep the Fish and Onions
Pat cod dry and season lightly. Soak onion slices in buttermilk for at least 20 minutes.Make the Batter
In a bowl, whisk flour, cornstarch, baking powder, and salt. Slowly add cold beer, whisking until smooth and slightly thick.Heat the Oil

Notes
