- 1 tbsp butter
- 4 cups baby spinach
- 3 cloves garlic, minced
- 1/2 cup crumbled feta
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- 1 tsp lemon zest or 1 tbsp lemon juice
- 1/2 cup cherry tomatoes, halved (optional)
- 2 tbsp chopped dill or parsley (optional)
Instructions
- Heat olive oil and butter in a skillet over medium-high heat.
- Add gnocchi in a single layer and cook until golden and crispy, then flip to crisp the other side.
- Lower heat and add garlic, oregano, and red pepper flakes, stirring gently.
- Add spinach and cook until wilted.
- Turn off heat and add feta, allowing it to soften slightly.
- Add lemon zest or juice and season with salt and pepper.
- Stir in tomatoes or herbs if using, and serve immediately.
Notes
- Do not overcrowd the pan to keep the gnocchi crispy.
- Reheat leftovers in a hot skillet, not the microwave.
- Use gluten-free gnocchi if needed.
