Description

Ingredients

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 cups baby spinach
  • 3 cloves garlic, minced
  • 1/2 cup crumbled feta
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste
  • 1 tsp lemon zest or 1 tbsp lemon juice
  • 1/2 cup cherry tomatoes, halved (optional)
  • 2 tbsp chopped dill or parsley (optional)


Instructions

  1. Heat olive oil and butter in a skillet over medium-high heat.
  2. Add gnocchi in a single layer and cook until golden and crispy, then flip to crisp the other side.
  3. Lower heat and add garlic, oregano, and red pepper flakes, stirring gently.
  4. Add spinach and cook until wilted.
  5. Turn off heat and add feta, allowing it to soften slightly.
  6. Add lemon zest or juice and season with salt and pepper.
  7. Stir in tomatoes or herbs if using, and serve immediately.

Notes

  1. Do not overcrowd the pan to keep the gnocchi crispy.
  2. Reheat leftovers in a hot skillet, not the microwave.
  3. Use gluten-free gnocchi if needed.
  4. Add extra vegetables to lighten the dish.
