Description
Crispy zucchini fritters made with fresh grated zucchini, herbs, cheese, and simple pantry staples are perfect as a snack, appetiser, or veggie side dish.
Ingredients
2 medium zucchini, grated and moisture removed
2 large eggs
½ cup all-purpose flour
⅓ cup grated Parmesan cheese
1 garlic clove, minced (optional)
2 tablespoons chopped scallions or onions
Salt and pepper, to taste
Olive oil, for frying
Instructions
Grate zucchini and place in a colander. Sprinkle lightly with salt and let sit for 10 minutes.
Wrap zucchini in a clean towel and squeeze out all excess liquid.
Combine zucchini with eggs, flour, cheese, garlic, scallions, salt, and pepper in a bowl. Mix well.
Heat olive oil in a skillet over medium heat.
Scoop the batter into the pan and flatten slightly into patties.
Cook for 3–4 minutes per side, until golden brown and crispy.
Transfer to a paper towel-lined plate to drain. Serve hot with dipping sauce of choice.
Notes
Squeezing out excess zucchini moisture is essential for crisp fritters.
Substitute Parmesan with feta or cheddar for a flavour twist.
Fritters can be made ahead, frozen, and reheated in the oven or air fryer.
Try serving with garlic yoghurt sauce, tzatziki, or spicy mayo.
