Ingredients
2 pounds boneless skinless chicken thighs, cut into chunks
1 cup low-sodium soy sauce
1/2 cup bourbon or apple juice
1/2 cup brown sugar
1/4 cup ketchup
1/4 cup apple cider vinegar
1 tablespoon minced garlic
1 teaspoon grated ginger
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons water
Sliced green onions
Sesame seeds
Instructions
Place chicken pieces into the slow cooker.
Whisk soy sauce, bourbon or apple juice, brown sugar, ketchup, vinegar, garlic, ginger, onion powder, and pepper until smooth.
Pour the sauce over the chicken to coat evenly.
Cook on low 4–6 hours or high 2.5–3 hours.
Stir cornstarch and water together, then add to the slow cooker.
Cook 15–20 minutes until the sauce thickens and turns glossy.
Serve over rice and garnish with green onions and sesame seeds.
Notes
For a lighter version, use chicken breasts.
For deeper flavor, sear the chicken first.
Add red pepper flakes for heat.
