- 2 pounds boneless skinless chicken thighs, cut into chunks
- 1 cup low-sodium soy sauce
- 1/2 cup bourbon or apple juice
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 1 tablespoon minced garlic
- 1 teaspoon grated ginger
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
- Sliced green onions
- Sesame seeds
Instructions
- Place chicken pieces into the slow cooker.
- Whisk soy sauce, bourbon or apple juice, brown sugar, ketchup, vinegar, garlic, ginger, onion powder, and pepper until smooth.
- Pour the sauce over the chicken to coat evenly.
- Cook on low 4–6 hours or high 2.5–3 hours.
- Stir cornstarch and water together, then add to the slow cooker.
- Cook 15–20 minutes until the sauce thickens and turns glossy.
- Serve over rice and garnish with green onions and sesame seeds.
Notes
- For a lighter version, use chicken breasts.
- For deeper flavor, sear the chicken first.
