A creamy, cheesy slow-cooker classic, Crock Pot Cheesy Chicken Spaghetti combines tender chicken, spaghetti noodles, and rich sauce for a comforting, family-friendly dinner that’s simple and satisfying.

- 1 ½ pounds boneless, skinless chicken breasts
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10 oz) can diced tomatoes with green chiles (like RoTel)
- 8 oz block cream cheese, cubed
- 2 cups shredded sharp cheddar cheese
- 12 oz spaghetti noodles, broken in half
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- ½ cup chicken broth (optional)
- Fresh parsley or chopped green onions, for garnish
Instructions
- Spray crock pot with nonstick spray and layer chicken breasts at the bottom.
- Add soups, diced tomatoes, and seasonings. Stir slightly to coat chicken.
- Cover and cook on Low for 6 hours or High for 3 hours, until chicken is tender.
- Remove chicken, shred, and return to pot. Add cream cheese and half the cheddar; stir until melted.
- Cook spaghetti separately until al dente, then add to crock pot mixture with a splash of broth if needed.
- Top with remaining cheese, cover, and cook 15–20 minutes until melted and bubbly.
- Garnish with parsley or green onions and serve hot.
Notes
- For extra flavor, try using pepper jack or Velveeta.
- Use rotisserie chicken for a faster version.
- Add bell peppers or mushrooms for variety.
