Description

A creamy, cheesy slow-cooker classic, Crock Pot Cheesy Chicken Spaghetti combines tender chicken, spaghetti noodles, and rich sauce for a comforting, family-friendly dinner that’s simple and satisfying.


Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10 oz) can diced tomatoes with green chiles (like RoTel)
  • 8 oz block cream cheese, cubed
  • 2 cups shredded sharp cheddar cheese
  • 12 oz spaghetti noodles, broken in half
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • ½ cup chicken broth (optional)
  • Fresh parsley or chopped green onions, for garnish


Instructions

  1. Spray crock pot with nonstick spray and layer chicken breasts at the bottom.
  2. Add soups, diced tomatoes, and seasonings. Stir slightly to coat chicken.
  3. Cover and cook on Low for 6 hours or High for 3 hours, until chicken is tender.
  4. Remove chicken, shred, and return to pot. Add cream cheese and half the cheddar; stir until melted.
  5. Cook spaghetti separately until al dente, then add to crock pot mixture with a splash of broth if needed.
  6. Top with remaining cheese, cover, and cook 15–20 minutes until melted and bubbly.
  7. Garnish with parsley or green onions and serve hot.

Notes

  1. For extra flavor, try using pepper jack or Velveeta.
  2. Use rotisserie chicken for a faster version.
  3. Add bell peppers or mushrooms for variety.
