- 1.5 pounds boneless skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 medium onion, diced
- 1 cup chopped celery
- 1 cup chopped carrots
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream or evaporated milk
- 1 pound potato gnocchi
- 2 cups fresh spinach or chopped kale
Instructions
- Place the chicken in the slow cooker with onions, celery, carrots, garlic, broth, and seasonings.
- Cook on low for 6–8 hours or high for 3–4 hours until tender.
- Remove chicken, shred, and return it to the slow cooker.
- Stir in gnocchi and cream, then cook 20–30 minutes until thickened.
- Add spinach or kale and stir until wilted, then adjust seasonings and serve.
Notes
- For a lighter version, swap heavy cream with evaporated milk.
- Add gnocchi near the end to prevent it from becoming mushy.
