Description

Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream or evaporated milk
  • 1 pound potato gnocchi
  • 2 cups fresh spinach or chopped kale


Instructions

  1. Place the chicken in the slow cooker with onions, celery, carrots, garlic, broth, and seasonings.
  2. Cook on low for 6–8 hours or high for 3–4 hours until tender.
  3. Remove chicken, shred, and return it to the slow cooker.
  4. Stir in gnocchi and cream, then cook 20–30 minutes until thickened.
  5. Add spinach or kale and stir until wilted, then adjust seasonings and serve.

Notes

  1. For a lighter version, swap heavy cream with evaporated milk.
  2. Add gnocchi near the end to prevent it from becoming mushy.
