Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs
1 (10.5 oz) can cream of chicken soup (low sodium preferred)
1 packet ranch dressing mix (or homemade equivalent)
1 cup long-grain white rice, rinsed
1 ½ cups whole milk (or 2% or dairy-free alternative)
1 ½ cups shredded cheddar cheese (sharp preferred)
Salt and black pepper, to taste
Optional: 1/2 cup frozen peas or diced vegetables
Optional: green onions, chopped (for garnish)
Instructions
Prep Slow Cooker: Lightly grease a 6–7 qt crockpot with non-stick spray.
Layer: Place chicken at the bottom. In a bowl, whisk together cream of chicken soup, ranch mix, and milk. Pour over chicken.
Add Rice and Cheese: Add rice and half the shredded cheese. Stir gently.
Cook: Cover and cook on LOW for 4–5 hours, or until chicken reaches 165°F and rice is tender.
Shred & Finish: Shred chicken in the pot. Stir in remaining cheese.
Serve: Garnish with green onions. Serve hot as is, or with crusty bread or salad.
Notes
Rinse rice well to prevent gumminess.
Use freshly shredded cheese for better melting.
Add broth if the mixture becomes too thick while cooking.
