Ingredients
2 pounds sirloin steak, cut into 1-inch cubes
4 large russet potatoes, diced
1 onion, chopped
1 cup beef broth
1 cup shredded cheddar cheese
1/2 cup sour cream
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon paprika
Salt and pepper, to taste
Chopped green onions, for garnish
Optional Add-ins:
1/2 cup cooked bacon bits
1/2 cup sliced mushrooms or bell peppers
1/4 teaspoon red pepper flakes (for heat)
Instructions
Season cubed steak with salt, pepper, and paprika.
Place diced potatoes and chopped onion in the bottom of the crockpot.
Layer seasoned steak on top.
In a bowl, mix beef broth, Worcestershire sauce, minced garlic, and additional salt and pepper. Pour over the steak and potatoes.
Cover and cook on LOW for 6–8 hours or on HIGH for 4–5 hours, until steak is tender and potatoes are soft.
About 15 minutes before serving, sprinkle shredded cheddar over the top and re-cover to melt.
Before serving, stir in sour cream and garnish with chopped green onions (and bacon bits if using).
Notes
Use chuck or flank steak if sirloin isn’t available.
For firmer potatoes, cut into larger chunks.
Swap cheddar with pepper jack or mozzarella for variation.
For extra richness, stir in cream cheese or a splash of heavy cream.
Add cooked bacon or veggies for added flavor and texture.
