Cucumber Tomato Salad is a fresh, crisp, and colorful summer side dish made with juicy tomatoes, crunchy cucumbers, onions, herbs, and a light vinaigrette. It’s easy to make, naturally healthy, and perfect for pairing with grilled meats, sandwiches, or light lunches.
Ingredients

2 English cucumbers, thinly sliced

1 pint cherry or grape tomatoes, halved

1/2 red onion, thinly sliced

2 tbsp fresh parsley or dill, chopped

3 tbsp olive oil

2 tbsp red wine vinegar or lemon juice

1 tsp Dijon mustard (optional)

Salt and pepper to taste
Instructions

Slice cucumbers into thin rounds or half-moons. Halve the cherry tomatoes. Thinly slice the red onion.

In a large bowl, combine cucumbers, tomatoes, onions, and chopped herbs.

In a small jar or bowl, whisk together olive oil, vinegar or lemon juice, Dijon mustard (if using), salt, and pepper.

Pour the dressing over the vegetables and toss gently to coat.

Refrigerate for 15–30 minutes before serving to allow flavors to meld.
Notes
For crisper cucumbers, salt them and let them sit for 10 minutes before adding to the salad.
Feta, mozzarella pearls, or avocado make great add-ins.
Store undressed salad and dressing separately for best results if making ahead.
