Description

  • 1 lb top sirloin or filet mignon, thinly sliced

  • 2 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 2 cups sliced cremini or button mushrooms

  • 2 tbsp all-purpose flour

  • 1 ½ cups beef broth

  • ½ cup sour cream

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon mustard

  • Salt and black pepper to taste

  • Optional: Fresh parsley, chopped (for garnish)

  • Optional: Egg noodles, mashed potatoes, or rice (for serving)


Instructions

  • Heat oil in a large skillet over medium-high heat. Add beef strips in a single layer, cook 2–3 minutes per side until browned. Remove and set aside.

  • In the same skillet, reduce heat to medium. Add onions and sauté until translucent (about 3–4 minutes).

  • Add mushrooms, and cook until golden and tender for about 5 minutes.

  • Sprinkle in flour and stir for 1 minute. Gradually whisk in beef broth until smooth.

  • Bring to a simmer and cook until the sauce thickens slightly, about 5 minutes.

  • Lower heat, stir in sour cream, Worcestershire sauce, and Dijon mustard. Mix until well blended.

  • Return the beef to the skillet and simmer for 5 minutes until it is cooked through and tender.

  • Season with salt and pepper to taste. Garnish with parsley if desired. Serve hot over egg noodles or your favorite base.

Notes

Don’t overcrowd the pan when browning beef—work in batches if needed.

Stir sour cream in on low heat to prevent curdling.

For extra richness, add a splash of heavy cream before serving.

Great served with steamed green beans or a side salad.
