  • 3/4 cup (150g) granulated sugar

  • 3 large eggs

  • 1/2 cup (120ml) sour cream

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1 cup chopped peanut butter cups

For the Chocolate Ganache Topping:

  • 1 cup (170g) semi-sweet chocolate chips

  • 1/2 cup (120ml) heavy cream

  • Additional chopped peanut butter cups (for garnish)


Instructions

  • Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment and grease the sides.

  • Make the crust: Combine crushed Oreos and melted butter. Press into the pan base. Bake for 10 minutes. Let cool.

  • Prepare filling: Beat cream cheese and sugar until smooth. Add peanut butter, then mix in eggs one at a time. Blend in sour cream, vanilla, and salt until creamy.

  • Gently fold in chopped peanut butter cups. Pour filling into crust.

  • Wrap the pan in foil and place in a water bath. Bake for 1 hour 25 minutes. Let cool in oven with the door ajar.

  • Make ganache: Heat cream, pour over chocolate chips, and stir until smooth. Let cool slightly, then pour over cheesecake.

  • Chill cheesecake for at least 4 hours or overnight. Garnish with extra peanut butter cups before serving.

Notes

For a no-bake version, skip the oven steps and chill the crust and filling until firm (4+ hours).
