Ingredients
For the Oreo Crust:
24 Oreo cookies (crushed)
5 tablespoons unsalted butter (melted)
For the Cheesecake Filling:
24 oz (680g) cream cheese, softened
1 cup (240g) natural peanut butter
3/4 cup (150g) granulated sugar
3 large eggs
1/2 cup (120ml) sour cream
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup chopped peanut butter cups
For the Chocolate Ganache Topping:
1 cup (170g) semi-sweet chocolate chips
1/2 cup (120ml) heavy cream
Additional chopped peanut butter cups (for garnish)
Instructions
Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment and grease the sides.
Make the crust: Combine crushed Oreos and melted butter. Press into the pan base. Bake for 10 minutes. Let cool.
Prepare filling: Beat cream cheese and sugar until smooth. Add peanut butter, then mix in eggs one at a time. Blend in sour cream, vanilla, and salt until creamy.
Gently fold in chopped peanut butter cups. Pour filling into crust.
Wrap the pan in foil and place in a water bath. Bake for 1 hour 25 minutes. Let cool in oven with the door ajar.
Make ganache: Heat cream, pour over chocolate chips, and stir until smooth. Let cool slightly, then pour over cheesecake.
Chill cheesecake for at least 4 hours or overnight. Garnish with extra peanut butter cups before serving.
Notes
For a no-bake version, skip the oven steps and chill the crust and filling until firm (4+ hours).
Use a water bath during baking to reduce cracking.
Store leftovers in the fridge for up to 5 days or freeze up to 3 months.
Let cheesecake sit at room temperature 15 minutes before slicing for clean cuts.
