Description

Sweet, crunchy, and irresistibly aromatic, these homemade candied almonds come together in under 30 minutes with just five pantry ingredients. Perfect for snacking, gifting, or topping your favorite dishes.


Ingredients

  • 2 cups raw almonds (unsalted)

  • 1 cup granulated sugar

  • ½ cup water

  • 1 tbsp ground cinnamon

  • 1 tsp vanilla extract


Instructions

  • Line a baking sheet with parchment paper or a silicone mat.

  • In a large nonstick skillet, combine sugar, water, and cinnamon. Stir over medium-high heat until the sugar dissolves and begins to bubble.

  • Add the almonds and stir continuously. After 8–10 minutes, the mixture will crystallize and coat the almonds.

  • Continue stirring as the sugar remelts into a glossy caramel coating.

  • Stir in the vanilla extract, then quickly transfer the almonds to the prepared baking sheet.

  • Spread them out evenly and allow to cool for at least 20 minutes before serving or storing.

Notes

Stir constantly to avoid burning the sugar.

Use a heavy-bottomed skillet for even heating.

Add a pinch of cayenne or nutmeg for flavor twists.

Cool completely before storing to maintain crunch.

Works well with pecans, walnuts, or cashews.
