This easy cheesy zucchini casserole is the ultimate comfort food. It’s made with tender sautéed zucchini, savory cheeses, and simple pantry staples. Perfect as a side dish or main, it’s baked to golden, bubbling perfection in under an hour.
Ingredients
4 medium zucchini (about 2 lbs), thinly sliced
1 small onion, diced
2 large eggs
1½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
1 tsp garlic powder (optional)
Salt and black pepper to taste
1 tsp Italian seasoning
½ cup breadcrumbs (optional)
2 tbsp butter
Instructions
Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
In a skillet, melt butter over medium heat. Add diced onion and cook until soft.
Add zucchini slices and sauté 5–7 minutes until tender. Drain excess moisture.
Whisk eggs with garlic powder, Italian seasoning, salt, and pepper in a large bowl.
Stir in the sautéed zucchini mixture, cheddar, and parmesan.
Pour the mixture into the baking dish. Top with remaining cheese and breadcrumbs (if using).
Bake uncovered for 30 minutes until golden and bubbling.
Let rest for 5–10 minutes before serving.
Notes
To reduce wateriness, salt and drain zucchini slices before cooking.
You can swap breadcrumbs for crushed pork rinds for a keto-friendly version.
Great add-ins include cooked chicken, crispy bacon, mushrooms, or cherry tomatoes.
