This Easy Crockpot Cilantro Lime Chicken is a flavorful, no-fuss dish made with tender shredded chicken slow-cooked in a zesty yogurt-based marinade. Perfect for tacos, rice bowls, or meal prep, it delivers bright lime and herb flavors with minimal effort.
Ingredients
1 cup plain Greek yogurt (whole, 2%, or low-fat)
2–4 garlic cloves, minced or grated
2 teaspoons fresh lemon zest
2 tablespoons fresh lemon juice
1½ teaspoons kosher salt, divided
2 pounds boneless, skinless chicken breasts or thighs
⅓ cup reserved yogurt marinade
Fresh cilantro and lime wedges, for garnish (optional)
Instructions
In a medium bowl, whisk together Greek yogurt, garlic, lemon zest, lemon juice, and ¾ teaspoon of salt until smooth.
Place chicken in a 6-quart slow cooker. Season evenly with the remaining ¾ teaspoon salt.
Pour ⅓ cup of the yogurt sauce over the chicken and toss to coat.
Cover and cook on high for 2–4 hours or on low for 4–6 hours, until the chicken is tender and fully cooked.
Remove chicken from the slow cooker and shred or slice as desired.
Strain and discard any excess liquid from the cooker.
Return the chicken to the slow cooker, add the reserved yogurt sauce, and stir to coat.
Serve warm in tacos, bowls, or over rice with optional cilantro and lime garnish.
