Ingredients
1 lb boneless, skinless chicken breasts or thighs, cut into small pieces
2 tablespoons olive oil or butter
1 medium onion, finely diced
6–8 garlic cloves, minced
2 carrots, peeled and sliced
2 celery stalks, chopped
6 cups low-sodium chicken broth
1 teaspoon Italian seasoning
½ teaspoon salt (add more to taste)
¼ teaspoon black pepper
½ teaspoon turmeric (optional)
Juice of ½ lemon
2 tablespoons chopped parsley or dill (for garnish)
Instructions
Heat olive oil or butter in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 5 minutes, stirring occasionally until softened.
Add minced garlic and sauté for 30 seconds until fragrant but not browned.
Add chicken pieces and cook until they begin to turn opaque, about 4–5 minutes.
Pour in chicken broth, then season with salt, pepper, Italian seasoning, and turmeric (if using). Bring to a gentle boil.
Reduce heat and let the soup simmer uncovered for 15–20 minutes until the chicken is cooked through and the broth is rich and aromatic.
Stir in lemon juice and garnish with chopped parsley before serving.
Notes
For a creamy variation, stir in a splash of heavy cream or coconut milk.
Roasting the garlic before adding gives a milder, sweeter flavor.
Leftovers taste even better the next day as the flavors develop.
