This Easy Garlic Chicken Soup is a comforting and flavorful dish made with tender chicken, fresh garlic, and a golden, aromatic broth. Perfect for chilly nights or when you need a soothing, immune-boosting meal that’s simple to prepare and satisfying from the first spoonful.
Ingredients
-
1 lb boneless, skinless chicken breasts or thighs, cut into small pieces
-
2 tablespoons olive oil or butter
-
1 medium onion, finely diced
-
6–8 garlic cloves, minced
-
2 carrots, peeled and sliced
-
2 celery stalks, chopped
-
6 cups low-sodium chicken broth
-
1 teaspoon Italian seasoning
-
½ teaspoon salt (add more to taste)
-
¼ teaspoon black pepper
-
½ teaspoon turmeric (optional)
-
Juice of ½ lemon
-
2 tablespoons chopped parsley or dill (for garnish)
Instructions
-
Heat olive oil or butter in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 5 minutes, stirring occasionally until softened.
-
Add minced garlic and sauté for 30 seconds until fragrant but not browned.
-
Add chicken pieces and cook until they begin to turn opaque, about 4–5 minutes.
-
Pour in chicken broth, then season with salt, pepper, Italian seasoning, and turmeric (if using). Bring to a gentle boil.
-
Reduce heat and let the soup simmer uncovered for 15–20 minutes until the chicken is cooked through and the broth is rich and aromatic.
-
Stir in lemon juice and garnish with chopped parsley before serving.
Notes
For a creamy variation, stir in a splash of heavy cream or coconut milk.
Roasting the garlic before adding gives a milder, sweeter flavor.
Leftovers taste even better the next day as the flavors develop.
Skip noodles if freezing the soup to maintain the best texture.
