Easy Healthy Broccoli Pasta

Description

A quick and flavorful pasta made with broccoli, garlic, olive oil, lemon, and Parmesan. Light, fresh, and perfect for busy weeknights.


Ingredients

Scale
  • 12 oz pasta
  • 4 cups broccoli florets
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup reserved pasta water
  • 2 tbsp chopped parsley


Instructions

  1. Boil pasta in salted water and add broccoli during the last few minutes.
  2. Reserve pasta water and drain.
  3. Sauté garlic and red pepper flakes in olive oil.
  4. Mash some broccoli into the pan to create a sauce base.
  5. Add pasta water gradually until sauce becomes creamy.
  6. Toss pasta and remaining broccoli into the sauce.
  7. Add Parmesan, lemon zest, lemon juice, salt, and pepper.
  8. Stir until glossy and finish with parsley.

Notes

  1. Add more pasta water if sauce thickens while cooling.
  2. For extra brightness, add additional lemon juice before serving.
  3. Store leftovers in an airtight container for up to four days.
