Ingredients
- 1 ½ cups warm water (110°F)
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 4 cups all-purpose flour
- 2 tablespoons melted butter
- 10 cups water
- ⅔ cup baking soda
- 1 large egg, beaten
- Coarse sea salt or pretzel salt

Combine warm water, sugar, and yeast in a bowl; let sit until foamy.

Stir in salt, melted butter, and flour one cup at a time; mix until dough forms.

Knead dough 5–7 minutes until smooth and elastic; cover and let rise 1 hour.

Divide dough into 8 pieces; roll into ropes and twist into pretzel shapes.

Boil each pretzel 30 seconds in water with baking soda; place on parchment paper.

Brush with egg wash, sprinkle salt, and bake at 450°F for 12–14 minutes until golden.
