  • 16 oz (450 g) full-fat cream cheese, softened

  • 1 cup fresh strawberries, pureed

  • 1/2 cup granulated sugar (adjust to taste)

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1 tbsp sour cream (optional, for thickening)

  • Parchment paper

  • Powdered sugar, for garnish

  • Optional toppings: crushed graham crackers, mint, chocolate drizzle


Instructions

  1. Prep: Preheat oven to 325°F (160°C). Line two baking sheets with parchment paper. Chill the mixing bowl for 30 minutes.

  2. Mix: In a stand mixer, cream the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Mix in vanilla. Gently fold in the strawberry purée.

  3. Spread and Bake: Spread the mixture thinly on a parchment-lined sheet. Bake at 350°F (175°C) for 15–20 minutes until the edges begin to brown.

  4. Roll: While still warm but not hot, gently lift the edges of the parchment and begin rolling from one short side. Use the parchment to help roll into a snug cylinder.

  5. Cool and Slice: Let cool completely. For clean cuts, slice using a sharp knife dipped in hot water.

  6. Decorate and Serve: Sprinkle with powdered sugar or garnish as desired.

Notes

Let the cream cheese reach room temperature before mixing for the best texture.

Do not overmix the batter. Mix just until ingredients are combined.

Let the roll chill for at least 1 hour before slicing for clean edges.

Store in fridge up to 3 days or freeze for up to 1 month.
