  • 1 tbsp olive oil

  • 1 medium yellow onion, diced

  • 2 cloves garlic, minced

  • 1 lb lean ground beef (or turkey)

  • 2 medium sweet potatoes, peeled and diced (½-inch cubes)

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • ½ tsp garlic powder

  • Salt to taste

  • 1 (14.5 oz) can fire-roasted diced tomatoes (with juice)

  • Optional: shredded cheese, cilantro, avocado, lime wedges


Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add diced onion and cook for about 3 minutes until translucent.

  • Add ground beef, breaking it up with a spatula, and cook until browned (about 5 minutes).

  • Stir in minced garlic and cook for 1 minute.

  • Add diced sweet potatoes, chili powder, cumin, garlic powder, and salt. Stir to coat evenly.

  • Pour in fire-roasted tomatoes (with juice). Cover the skillet.

  • Reduce heat to medium-low and simmer for 10–12 minutes, until sweet potatoes are fork-tender.

  • (Optional) Sprinkle with shredded cheese and cover for 2 more minutes to melt.

  • Serve hot, garnished with fresh cilantro or avocado if desired.

Notes

Use broth if the mixture starts to dry out (add ¼ cup as needed).

For more spice, add cayenne, red pepper flakes, or diced jalapeños.

Great over rice, in wraps, or as taco filling.

Can be frozen for up to 3 months.
