This one-pan Southwest Ground Beef & Sweet Potato Skillet is the perfect answer to busy weeknights. With bold chili spices, tender sweet potatoes, and savory ground beef all cooked in a single skillet, it’s quick, hearty, and loaded with smoky-sweet flavor. Ingredients
1 tbsp olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 lb lean ground beef (or turkey)
2 medium sweet potatoes, peeled and diced (½-inch cubes)
1 tsp chili powder
1 tsp ground cumin
½ tsp garlic powder
Salt to taste
1 (14.5 oz) can fire-roasted diced tomatoes (with juice)
Optional: shredded cheese, cilantro, avocado, lime wedges
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for about 3 minutes until translucent.
Add ground beef, breaking it up with a spatula, and cook until browned (about 5 minutes).
Stir in minced garlic and cook for 1 minute.
Add diced sweet potatoes, chili powder, cumin, garlic powder, and salt. Stir to coat evenly.
Pour in fire-roasted tomatoes (with juice). Cover the skillet.
Reduce heat to medium-low and simmer for 10–12 minutes, until sweet potatoes are fork-tender.
(Optional) Sprinkle with shredded cheese and cover for 2 more minutes to melt.
Serve hot, garnished with fresh cilantro or avocado if desired.
Notes
Use broth if the mixture starts to dry out (add ¼ cup as needed).
For more spice, add cayenne, red pepper flakes, or diced jalapeños.
Great over rice, in wraps, or as taco filling.
Can be frozen for up to 3 months.
Works well with turkey, chicken, or plant-based crumbles.
