These Greek Lemon Chicken Skewers are marinated in olive oil, lemon juice, garlic, and herbs, then grilled to juicy perfection. Served with a creamy, tangy homemade tzatziki sauce, they bring the fresh, bold flavors of the Mediterranean to your table.
Ingredients
For the Chicken Skewers:

1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks

1/4 cup extra-virgin olive oil

Zest and juice of 2 lemons

3 garlic cloves, minced

2 tsp dried oregano

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

Wooden skewers, soaked for 30 minutes

Optional: sliced bell peppers, onions, zucchini for skewering
For the Tzatziki Sauce:

1 cup full-fat Greek yogurt

1/2 cucumber, grated and drained

1–2 garlic cloves, minced

2 tbsp fresh lemon juice

1 tbsp fresh dill or mint, chopped

Salt and pepper to taste
Instructions

Marinate Chicken: In a bowl, whisk olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper. Toss chicken in the marinade. Cover and refrigerate for 2–4 hours.

Prepare Skewers: Thread marinated chicken and optional veggies onto soaked wooden skewers.

Grill: Preheat the grill to medium-high heat (400–450°F). Oil the grates. Grill the skewers 6–8 minutes per side or until the chicken reaches 165°F internally.

To make Tzatziki, mix grated cucumber, yogurt, garlic, lemon juice, and dill/mint in a bowl. Season with salt and pepper. Chill before serving.

Serve: Let the chicken rest for 5 minutes. Drizzle with lemon juice. Serve with tzatziki, warm pita, or salad.
Notes
Don’t marinate for more than 6 hours for the best flavor to avoid a mushy texture.
Use metal skewers for easier grilling.
Tzatziki can be made 1 day ahead for a deeper flavor.
Add crumbled feta or fresh parsley before serving.
