For the Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks

  • 1/4 cup extra-virgin olive oil

  • Zest and juice of 2 lemons

  • 3 garlic cloves, minced

  • 2 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Wooden skewers, soaked for 30 minutes

  • Optional: sliced bell peppers, onions, zucchini for skewering

For the Tzatziki Sauce:

  • 1 cup full-fat Greek yogurt

  • 1/2 cucumber, grated and drained

  • 12 garlic cloves, minced

  • 2 tbsp fresh lemon juice

  • 1 tbsp fresh dill or mint, chopped

  • Salt and pepper to taste


Instructions

  1. Marinate Chicken: In a bowl, whisk olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper. Toss chicken in the marinade. Cover and refrigerate for 2–4 hours.

  2. Prepare Skewers: Thread marinated chicken and optional veggies onto soaked wooden skewers.

  3. Grill: Preheat the grill to medium-high heat (400–450°F). Oil the grates. Grill the skewers 6–8 minutes per side or until the chicken reaches 165°F internally.

  4. To make Tzatziki, mix grated cucumber, yogurt, garlic, lemon juice, and dill/mint in a bowl. Season with salt and pepper. Chill before serving.

  5. Serve: Let the chicken rest for 5 minutes. Drizzle with lemon juice. Serve with tzatziki, warm pita, or salad.

Notes

Don’t marinate for more than 6 hours for the best flavor to avoid a mushy texture.

Use metal skewers for easier grilling.

Tzatziki can be made 1 day ahead for a deeper flavor.

Add crumbled feta or fresh parsley before serving.
