Description
This slow cooker meatloaf is moist, flavorful, and easy to prepare. It combines classic meatloaf ingredients with a sweet and tangy glaze, all cooked low and slow for a tender, juicy result—no oven required.
Ingredients
For the Meatloaf:
2 lbs ground beef
1 cup breadcrumbs
2 large eggs
1 medium onion, finely chopped
2 cloves garlic, minced
½ cup milk
¼ cup ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried Italian seasoning
For the Glaze:
½ cup ketchup
2 tbsp brown sugar
1 tbsp Dijon mustard
Instructions
In a large bowl, combine all meatloaf ingredients. Mix until just combined—don’t overmix.
Shape the meat mixture into a loaf. Place it on a parchment-lined or foil “sling” and lower into a greased slow cooker.
Mix glaze ingredients in a small bowl and spread half over the top of the loaf.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until internal temp reaches 160°F (71°C).
Spread the remaining glaze over the loaf in the final 30 minutes.
Let rest 10 minutes before slicing and serving.
Notes
Use lean beef to reduce grease.
Add finely chopped carrots or zucchini for extra nutrition.
Lift the loaf with the foil sling to remove easily from the cooker.
