Description
This slow cooker taco casserole is a family-friendly, layered dish packed with ground beef, beans, cheese, tortillas, and bold Mexican-inspired spices. It’s a one-pot comfort food favorite perfect for weeknight dinners.
Ingredients
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
1 (10 oz) can diced tomatoes with green chilies (like Rotel)
1 (8 oz) can tomato sauce
1 packet taco seasoning (or 2 tbsp homemade)
6 small flour tortillas, cut into quarters
1½ cups shredded cheddar cheese
Optional toppings: sour cream, chopped cilantro, diced avocado, sliced olives
Instructions
Brown ground beef in a skillet over medium heat. Drain excess fat.
Add onions and garlic; sauté for 2–3 minutes.
Stir in taco seasoning, tomato sauce, and diced tomatoes. Simmer for 5 minutes.
Lightly grease the slow cooker. Layer as follows:
Tortilla pieces
Meat mixture
Beans
Cheese
Repeat until ingredients are used up (end with cheese on top).
Cover and cook on low for 4–5 hours or high for 2–3 hours.
Let rest for 10 minutes before serving. Add optional toppings if desired.
Notes
Corn tortillas or tortilla chips can be used instead of flour tortillas.
Add jalapeños or bell peppers for extra flavor.
Great for potlucks or feeding a crowd.
