Description

This Ground Turkey Teriyaki Stir Fry is a quick, flavorful, and balanced weeknight dinner made with lean turkey, crisp vegetables, and a glossy homemade teriyaki sauce cooked in one skillet.


Ingredients

  • 1 tablespoon avocado oil or olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1/3 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1/3 cup chicken broth
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water


Instructions

  1. Prep the vegetables and whisk together the soy sauce, sweetener, broth, vinegar, sesame oil, and cornstarch slurry.
  2. Heat oil in a large skillet and brown the ground turkey until fully cooked.
  3. Add the onions, peppers, carrots, and broccoli and cook until vegetables are tender-crisp.
  4. Pour in the teriyaki sauce and stir until thickened and glossy.
  5. Serve over rice, noodles, or cauliflower rice with optional sesame seeds or green onions.

Notes

  1. Store leftovers in airtight containers for up to four days.
  2. Add a splash of broth when reheating to loosen the sauce.
  3. Vegetables can be swapped with snap peas, mushrooms, or zucchini as desired.
